1) The background colour in the editor is changed using "Options\Background colour". This does not affect the background colour in ICAV.
2) ICAV is designed to work with or without the LMS and therefore contains options which control whether to get its background colour from the LMS, or to use a designer specified colour. The background colour in the viewer is controlled using "Actions\Change display options" from within ICAE. Here you can specify whether the ICAV should take its colour from the LMS ("Use host background colour"), or specify a particular colour.
